Exclusive two-week sushi pop-up at NAMI Restaurant & Bar, presented for the very first time in Singapore by the elite culinary team of acclaimed Sushi Shin. Nestled in Niseko, Hokkaido, a region renowned for its world class winter resorts and gourmet indulgences, the restaurant marks the first venture by Master Chef Masaki Miyakawa after being awarded three Michelin stars for his eponymous Sapporo restaurant, Sushi Miyakawa – the only sushi establishment in Hokkaido and one of five sushi restaurants in Japan to be conferred the highly revered accolade.
Under Chef Miyakawa’s meticulous tutelage, his protégé, Head Chef Hironori Satake, together with Chef Kazuo Ogura helm Sushi Shin. Embracing the Master Chef’s ethos, Sushi Shin presents the same exquisite menu as Sushi Miyakawa, showcasing the finest seasonal produce from Hokkaido in Edomae style sushi that highlight the innate flavours and umami in carefully sourced ingredients. This traditional form of sushi originated in the Edo period when there were no means of refrigeration and raw fish was preserved by marinating in shoyu, salt, vinegar or by simmering in a broth.
Fortified by a strong conviction that sixty percent of sushi is about the rice also known as Shari, each sushi shaped by the chefs at Sushi Shin focuses on texture and seasoning to extol the best flavours in the delicate morsel. Moderated by natural fish oils, only a hint of Akazu red vinegar is used in the rice and the recipe is adapted to suit the fat content of the fish as the season changes.
At the Sushi Shin Pop-Up, these intricacies of sushi making are artfully expressed in a refined 19-Course Omakase Menu ($380++ per person) comprising of Cold Chawanmushi with Ikura, Alfonsino Sashimi, Seared Bonito, Kinki Shabu Shabu, Steamed Abalone with Abalone Liver Sauce, Smoked Spanish Mackerel, Chef ’s Selection of 10 Sushi Varieties, Japanese-Style Omelette, Miso Soup, and a seasonal Dessert.
Inexorably just as satiating and decadent is the 14-Course Nigiri Sushi Menu ($165++ per person) featuring Cold Chawanmushi with Ikura, Chef ’s Selection of 10 Sushi Varieties, Japanese- Style Omelette, Miso Soup, and a seasonal Dessert.
