The highlight of the buffet is the seafood section, where you can feast on over nine types of fresh and succulent seafood, such as lobster, Fine de Claire & NZ oysters, scallops, snow crab legs, tiger prawns, Canadian black mussels and Japanese clams. The oysters are freshly shucked on the spot and are plump and briny. The lobster is sweet and tender, while the scallops are juicy. Next to it is the JAPANESE CORNER, with dishes like Sashimi moriawase, Salmon, tuna & Hokkigai sashimi, Varieties of sushi & maki roll, Cold soba noodles with condiments, Wasabi, shoyu, pickled ginger, assorted Japanese pickles
Another highlight is the live grill station, where you can watch the chef prepare your meats over huge flames. You can choose from slow-roasted Australian prime ribs. The prime ribs are especially impressive, with a crusty exterior and a pink and moist interior. The Grill stations offer meats like Slow-roasted Australian prime ribs, Grilled lamb rack, pico de Gallo, Thai marinated chicken thigh, spicy sauce, Grilled beef tongue, BBQ sauce, Teriyaki squid, sesame, spring onion, Locally caught whole fish, Red wine sauce, green peppercorn sauce, béarnaise. We especially love the grilled local whole fish which are the red snapper and pomfret on that day. They are so fresh and you cannot get this from any buffet in Singapore. If you are in the mood for some international flavours, you can also explore the French corner, the Italian pasta and pizza station, the cheese corner and the Asian section. The French corner offers dishes like Sauteed mushroom, spinach, Comté cheese, Pork pancetta, Comté cheese, egg, Smoked salmon, spinach, sour cream, Pan seared foie gras, Joue de boeuf bourguignon, Cuisse de canard confite, Seafood bouillabaisse, Ratatouille and Escargot. The foie gras is rich and creamy, while the escargot is garlicky and buttery. The Italian station has dishes like pasta and pizza. The cheese corner has a variety of European cheeses to pair with crackers, bread and fruits.
The Asian section has dishes like Silver fish fried rice, XO sauce, seafood, tobiko, Kam Heong crab, Crispy chicken, plum sauce, fish skin, Sweet & sour Iberico Secreto, Suan Cai fish, Braised top shell, medley vegetable, truffle, Old cucumber pork ribs soup with dried mussels. LIVE STATION includes Wok-fried XO seafood carrot cake and laksa. The crab dishes are spicy and tangy, while the laksa is fragrant and coconutty. The Herbal cordyceps noodle soup are springy and savoury, while the XO Carrot cake is crispy on the outside and moist on the inside.
Finally, don’t forget to save some room for dessert. The dessert section has a tempting array of cakes, macarons, pastries, ice cream and fruits. Some of the standout desserts are the American cheesecake and the blueberry cheesecake from D9 Cakery. They are smooth and decadent, with a crumbly base and a fruity topping.
