In 2018, Summer Palace’s Chinese Dim Sum Chef Leong Kwok Sing partnered with Manhattan to introduce two snowskin variants with alcoholic cores of barrel-aged rye whiskies. Last year, Regent Singapore went one step further to include each dining outlet’s unique spin on the Mid-Autumn staple.
The tradition continues this year, with Basilico working around quintessentially Italian ingredients, Tea Lounge incorporating some of their finest teas and Manhattan looking to its rickhouse for inspiration. This year’s snowskin line up at a glance includes:
Double Espresso and Almond Marzipan Snowskin Mooncake – Basilico (NEW)
Pistachio, Fig and Amarena Cherry Snowskin Mooncake – Basilico (NEW)
Macapuno (Plantation Rum, Spiced Coconut and Yuzu) – Manhattan (NEW)
Orange and Pine Nuts – Summer Palace (NEW)
Signature Black Sesame Paste – Summer Palace
Gryphon Green Tea with Melon Seeds – Tea Lounge
White Lotus Paste with Egg Yolk and Melon Seeds – Summer Palace
Mao Shan Wang Durian – Summer Palace
Cocktail & Mooncake Pairing
This Mid-Autumn season, Regent Singapore went beyond traditional tea and mooncake pairings by introducing four complementary Manhattan cocktails to this year’s new snowskin creations.
Here Bartender of Manhattan Sophia Kang worked closely with Executive Chef of Regent Singapore, Angelo Ciccone; and Dim Sum Chef of Summer Palace, Leong Kwok Sing to craft cocktails carrying similar elements in this year’s mooncake collection.
The Lecce cocktail, for example, is a potent concoction of Widges Gin, Amaretto and Mr Black Coffee Amaro to bring out the caffeine and almond notes in the Double Espresso and Marzipan snowskin mooncake.
The bottles are available for delivery and takeaway at $24 nett each or all 4 for $80 nett, available until 1 October, 2020.
At Manhattan, the cocktails will be served with a paired mooncake for $30++ until 28 September.
