LeVeL33 integrates diverse spaces that offer different experiences so that all his guests’ needs can be fulfilled, the redesigned layout now sees the venue streamlined into three different spaces: the LeVeL33 DiningRoom, LeVeL33 Social, and the terrace.
The spaces command a spectacular view over Marina Bay and some of Singapore’s most iconic landmarks such as the Singapore Flyer, the Marina Bay Sands and Fullerton complexes, and the esplanade.
The space is designed around an actual working brewery whose functioning elements are seamlessly woven into the architectural fabric. The bar counter has been given a full makeover inspired by the wooden logs used to fire up beer brew-kettles; this custom design gives a glimpse into the belly of an olden-day brewhouse.
Another unique feature is the ‘floating’ beer taps which descend from the ceiling and hover over the counter. Such taps were and are still not available pre-built, so they had to be designed, engineered and custom-made from scratch solely for LeVeL33 – just like the fermentation tanks that greet arriving guests. Similar visual totems reminded guests of the centrality of the brewing process in the renovated restaurant, but in the new space they take on the power of pieces in an art gallery.
The ‘floating’ beer taps
Executive Chef ArChan Chan has more deeply integrated the beer brewing elements into the food, including more creatively using the different beers and beer ingredients, and taking inspiration from the beer brewing processes itself. She has also begun creating more culinary elements from scratch: pickling and fermenting vegetables with the spent grain (the filtered by-product after barley malt has gone through the first process of turning into beer) and dry-ageing her own meats.
The sophisticated LeVeL33 Dining Room exudes a mellow ambience suited to special occasions; for when you need to impress. The custom-designed and built furnishings here are specially designed to ensure more comfort and privacy. This is also where the private dining room is located.
Endorsed by long term partner Barons de Rothschild, the elegant private room is a showcase of 20 different vintages that represent the Rothschilds’ storied heritage, and is a concrete expression of their relationship with LeVeL33. Guests reap the benefits of this partnership in many ways including the designation of a Rothschild champagne as house pour and use of the same yeast that Barons de Rothschild use for their champagne in their special Brut Beer brew.
The other two spaces, LeVeL33 Social and the Terrace, were designed to stimulate social interaction and encourage a buoyant atmosphere for groups to relax, and unwind.
The Terrace offers a different approach: there’s something about open-to-the-sky spaces and panoramic views that makes the heart soar. The intimacy and glamour of unrestricted, skin-to-air experience is a privilege possible only because of LeVeL33’s location as the world’s highest urban microbrewery, probably the best view in Singapore.
Dining is appropriately communal at both spaces; they can and do share menus which are designed for easy group dining. Highlight dishes from LeVeL33 Social’s à-la-carte menu include the seafood and meats “FromTheGrill”. These are served with mini housemade Spent Grain Mantous that are unique to LeVeL33 in large part due to the use of spent grain.
