Grand Copthorne Waterfront Hotel Singapore invites diners on a cross-country culinary journey with Flavours of Malaysia, a vibrant buffet showcase at Food Capital running from 1 June to 12 July 2026.
Presented in collaboration with Tourism Malaysia, Sarawak Trade and Tourism Office and Sabah Trade and Tourism Office in Singapore, supported by the Malaysian High Commission in Singapore, Flavours of Malaysia brings together the flavours, traditions, and stories of four distinct regions through guest chefs representing Johor, Penang, Sabah, and Sarawak.
Timed alongside the Visit Malaysia 2026 campaign, the experience celebrates the depth and diversity of Malaysian cuisine through a more regional and nuanced lens — going beyond familiar favourites to spotlight lesser-seen specialities rarely experienced outside Malaysia.
Set against the hotel’s signature riverfront backdrop, the showcase reflects Grand Copthorne Waterfront’s continued focus on culture-led dining — reframing the buffet as a platform for storytelling.

A Culinary Showcase Rooted in Authenticity
Unlike conventional Malaysian-themed buffets, Flavours of Malaysia, is shaped by the voices and expertise of its chefs, each presenting regional specialities influenced by family recipes, festive traditions, and personal culinary journeys.
From Johor’s royal-influenced Malay heritage and Penang’s bold street food culture to the indigenous coastal flavours of Sabah and Sarawak, the buffet offers a layered and authentic view of Malaysian cuisine across Peninsular and East Malaysia.
Led by Johor-born Executive Sous Chef Peter Pang, alongside four visiting chefs from across Malaysia, the line-up includes:
- Chef Linn Yong (Limau & Linen, Sabah)
- Chef Azhar bin Bah (Smart Hormony Catering, Penang)
- Chef Lesly Anak A’ik (Riverside Majestic Hotel Astana Wing, Sarawak)
Together, they present a collective 8-hands experience, a term used in the culinary world to describe a collaborative showcase by five chefs cooking side by side, balancing authenticity with thoughtful adaptation for a Singapore dining audience.
The chefs were selected in collaboration with Tourism Malaysia, Sarawak Trade and Tourism, and Sabah Trade and Tourism Office in Singapore for their strong reputation and expertise in their respective regional cuisines, ensuring the experience remains grounded in authenticity while thoughtfully adapted for an international dining audience.
Flavours of Malaysia: Buffet Highlights
Experience a definitive culinary tour with every dish serving as a tribute to the nation’s multicultural tapestry. This promotion transcends a typical dining experience; it is a holistic celebration of Malay, Chinese, and Indian influences alongside indigenous Bornean traditions, offering a rare opportunity to taste the collective heritage of the entire Malaysian federation in a single, sprawling feast. Each chef presents signature dishes that reflect the spirit of their region, from iconic classics to deeper culinary discoveries.
The buffet is halal-verified by Majlis Ugama Islam Singapura (MUIS), ensuring the experience is accessible to all diners. Selected live cooking stations further elevate the experience, allowing guests to watch dishes prepared fresh to order, adding a sense of theatre and connection to the dining experience.

Extending the experience beyond the buet, The Lobby Lounge presents a Malaysian-Inspired Afternoon Tea, where familiar flavours are reinterpreted in refined bite-sized indulgences.
Savoury highlights include the Mini Ramly Burger, Chicken Skewer with Lemongrass Peanut Sauce, Otak-Otak Focaccia, and Keropok Lekor with Sambal, while desserts celebrate beloved local flavours through Cendol Cake, Mousse Ubi Kelapa, Jagung Manis Cake, Durian Mochi, D24 Durian Cream Pu, and Plain and Gula Melaka Scones. The experience will also feature a curated tea pairing in collaboration with Pryce Tea and The Lobby Lounge’s signature unlimited scone trolley.
