Firebake – Festive Heritage Specials

This Christmas, gather once more around the woodfire oven with family and friends to soak up the festive spirit. Firebake Woodfired Bakehouse and Restaurant will be serving signatures from their regular daily menu as well as festive heritage specials which were first introduced last year and which have stood up properly to the test of time as they have for hundreds of years. Available for dine-in and take away options.
Christmas Specials Founder Konstantino Blokbergen hails from a family of hoteliers and restaurateurs, and is a 25-year veteran of hospitality and F&B. He was born in Greece of mixed European parentage, and grew up in Cully, the French speaking region of Switzerland. This Christmas, Konstantino takes you on a personal festive journey once more: take a peek into his childhood Christmas food memories.
Growing up,Konstantino’s parents were busy year-round with the family-run hotel and restaurants, but Christmas Eve was always significant as the the entire family would come together to cook up a feast, before enjoying the hearty comfort food over drinks and laughter. To carry on this tradition, Firebake will be closed from the 24th to the 26th of December.
For the month of December, Firebake will share familial festive joy with two special festive heritage dishes close to Konstantino’s heart, prepared in the restaurant’s signature wood fire ovens. These festive dishes are a culmination of the inspirations drawn from his mixed European background.

Firebake_Festive Chicken
Festive Chicken ($55+) is a family-favourite perfect for the Swiss winter, with mushrooms at their peak of flavour and character. Trumpet mushroom stake the limelight in this dish, and the chicken is slow-cooked in its own stock along side a medley of root vegetables, where familiar flavours develop fully into a comfort and hearty dish.

 

Firebake_Kugelhopf
A classic Germanic dessert, the buttery Christmas Kugelhopf ($25+) is a decadent affair. Made with sourdough, the Kugelhopf is speckled with rum-soaked raisins, dipped in clarified butter and orange blossom syrup, and covered with a thick sprinkling of sugar and sliced almonds. It will be accompanied by crème fraiche and fermented strawberries.
Firebake’s festive heritage signatures are available for the month of December 2018.
