For generations across Asia, abalone has occupied an esteemed position at celebratory banquets, almost exclusively associated with Lunar New Year feasts and lavish wedding tables. Yet, limiting this prized sea jewel to annual festivities overlooks its culinary range. Enter the Abagold Abalone Festival 2026, returning for its second edition from 10 October to 12 December 2026.
Organized by Abagold in partnership with Ler E, its exclusive Singapore importer, the two-month culinary showcase challenges tradition by bringing South Africa’s premium farmed abalone onto everyday contemporary menus across the Lion City. Through bespoke collaborations with leading dining institutions—spanning refined French-Japanese pastry ateliers and rustic izakayas to Italian trattorias and modern Chinese concepts—the festival invites food lovers to “reveal the gold within” an extraordinary marine harvest.
Born of the Southern Ocean: The Abagold Pedigree
What gives Abagold abalone its distinctive culinary standing is its origin. The mollusks are sustainably cultivated at the southernmost tip of Africa in Hermanus, where the cool, pristine, nutrient-dense currents of the Atlantic Ocean provide optimal natural growing conditions. Backed by three decades of sustainable aquaculture experience and globally accredited under ISO22000, GMP, and HACCP standards, Abagold is widely recognized as one of the most reliable producers in international aquaculture.
“Having worked with abalone from Australia, China, and Chile, and in 25 years with Abagold, their quality has never wavered,” notes Esther Loh, Abagold Brand Ambassador and Founder of Ler E. “It’s why chefs can build a dish around this abalone with confidence in its flavour, whether they’re drawing out its sweetness or letting it carry a dish entirely on its own.”
Unlike wild-harvested mollusks that can vary drastically in texture, every Abagold yield delivers clean minerality layered beneath a subtle, natural sweetness. When sliced raw, its ocean freshness shines in its purest form. When slow-braised, the meat tenderizes while absorbing the deep aromatics of surrounding broths. Flash-grilled, stir-fried over high heat, or gently steamed, the abalone retains its firm, toothsome bite, serving as the defining centerpiece of any culinary creation.
Eight Kitchens, Eight Creative Interpretations
For the 2026 festival, eight acclaimed dining concepts across Singapore have introduced limited-edition dishes that highlight the mollusk across diverse culinary traditions:
1. AMI Patisserie: French-Japanese Elegance
At his boutique dining salon along Scotts Road, Chef Makoto Arami presents the Abalone Chawanmushi with Autumn Mushrooms. Integrated into AMI Patisserie’s autumn dessert dining experience (S$128++), this savory masterpiece places Abagold abalone within a silky steamed egg custard. A refined dashi crafted from abalone and seaweed extracts unearths deep umami and clean salinity, complemented by generous shavings of autumn maitake mushrooms and tender braised abalone slices.
2. Zenryoku Izakaya: Smoky Binchotan Mastery
Along Upper Thomson Road, Zenryoku Izakaya crafts two distinct preparations, best paired with their curated drinks program:
- Shioyaki Abalone (S$15.80++): Thinly sliced abalone salt-grilled over glowing binchotan coals, drizzled with a decadent dashi butter emulsion derived from the abalone’s own liver for a rich, smoky profile with a crisp center.
- Awabi Itame (S$29.80++): Inspired by nostalgic staff-meal comforts of ginger and scallions, this high-heat wok stir-fry pairs succulent abalone with meaty portobello mushrooms, delivering robust wok hei.
3. Supply & Demand: Rich Mediterranean Indulgence
Perched along the Esplanade waterfront, Supply & Demand introduces the Grilled Abalone Risotto (S$47++). The abalone is kept as the undisputed hero, seared and perched atop al dente Carnaroli rice cooked in decadent sea urchin (uni) and crustacean butter, finished with an earthy swirl of squid ink and fresh parsley.
4. Scott’s Grill: The Complete Essence of the Shell
At Shaw Centre, Scott’s Grill presents the Grilled Abalone Pasta with Liver Emulsion (S$58++). The preparation is a clinic in technical precision: whole abalone is steamed shell-on for three hours to develop tenderness before being grilled to order. Its rich liver is gently poached in cream and folded into a base of garlic, savory dashi, herbaceous shiso, and concentrated chicken jus.
5. Capasso: Telok Ayer’s Dual Expression
Italian specialist Capasso contributes two contrasting plates:
- Abagold Risotto (S$68++): A rich seafood risotto pairing larger-grade abalone with tender mongo ika (cuttlefish), cordyceps flowers, and toasted puffed barley, simmered in a stock brewed directly from the abalone liver.
- Cold Angel Hair Pasta with Abalone Supplement (S$46++): Chilled capellini tossed in a savory miso-smoked uni dressing, crowned with Oscietra caviar and crisp Japanese myoga ginger.
6. Avant Seafood Market: Elemental Purity
Showcasing the harvest with minimal intervention, Owen Road’s Avant Seafood Market offers Miso Butter Steamed Abalone (S$15++), lightly kissed by the grill for a touch of char, and Cold Baby Abalone (S$25++), quickly blanched and iced to preserve its sweet, ocean-fresh snap.
7. XIAN by Suguru: Modern Teochew Sophistication
For gourmet home dining, Chef Desmond Heng of Suguru Home Dining presents Teochew Marinated Abalone under his modern raw-cured concept, XIAN. Swapping out conventional yellow wine for aromatic Luzhou baijiu, the abalone is poached in a light soy base infused with rock sugar, star anise, and Chinese herbs, achieving an elegant balance between botanical warmth and natural sweetness. Available for pre-order online starting late October.
8. Tanglin Club: Private Heritage
Rounding out the festival partners, Tanglin Club presents an exclusive, members-only creation at Tang Yun: South African 6-Head Abalone with Morel Mushrooms and Beancurd, spotlighting large-format specimens braised in classic banquet fashion.
Embark on The Gold Trail: Dine, Collect, and Redeem
To encourage diners to explore diverse cuisines, the festival features The Gold Trail—an interactive culinary passport. By ordering a featured festival dish across participating venues (Avant, Capasso, Scott’s Grill, Supply & Demand, Vineyard, and Zenryoku), diners collect collectible stamps that gradually assemble into an “Abagold Food City” visual canvas:
- 3 Stamps: Unlocks the first special-edition “Abby” mascot stamp and 15% off Abagold Canned Abalone purchases.
- 4 Stamps: Completes the artwork, unlocking the second Abby stamp, 15% off canned purchases, plus a complimentary can of premium Abagold Abalone worth S$68.
All gift and discount redemptions take place at Avant Seafood Market (129 Owen Road) throughout the festival period.
Running through 12 December 2026, the Abagold Abalone Festival proves that when sustainable aquaculture meets visionary local culinary talent, a historic banquet delicacy can transform into an exciting, everyday gastronomic indulgence.
