We stepped into the quiet sanctuary of the counter to experience the flagship $118++ Autumn Shiki Omakase, an adventure defined by peak seasonal seafood, delicate citrus, binchotan smokiness, and unadulterated luxury.

Exploring the Tiers: Tailored Autumn Indulgence

Fat Cow has cleverly designed this seasonal showcase so that every tier shares a core narrative of autumn’s arrival. Each option opens with a comforting seasonal fish broth and progresses through exquisite nigiri courses including Hirame (flounder), Kanpachi (amberjack), and plump Hokkaido Hotate (scallop). The mid-course procession across all menus also spotlights sweet Akaebi (red shrimp) and cured Saba Senmaizuke (mackerel wrapped in Kyoto pickled turnip).

Our meal began with Fat Cow’s signature Seasonal Vegetables and Fish Soup with Sake. The clear, piping-hot white fish broth was infused with a touch of Nanatsuboshi sake, presenting clean sweetness that settled the palate. Accompanied by salted plum, crisp seaweed, hijiki with edamame, and deep-fried Kyoto sweet chillies lightly simmered in soy and bonito flakes, this prologue captured the grounding, earthy character of late autumn.

The Coastal Harvest: Precision Nigiri

The chef immediately transitioned into cold-water marine delicacies, starting with Hirame (flounder) topped with freshly grated yuzu zest. In late autumn, flounder builds up essential fat reserves to brave the approaching winter, yielding sweet, firm white flesh that sang against the fragrant citrus oil.

Next came lightly scored Kanpachi (yellowtail amberjack). October and November mark the blooming season for kiku (edible chrysanthemum), Japan’s symbolic autumn flower. Dressed in tangy chrysanthemum vinegar and finished with delicate yellow petals, the rich, oily profile of the fish was brought into crisp balance.

The third piece, Hotate, featured plump Hokkaido scallop harvested during its prime winter nutrition storage. Marinated in sweet-and-savory dashi tamarind soy, the tender mollusk possessed a melting creaminess offset by the mellow tang of mature brown tamarind.

Richness Meets Crunch: Crustaceans and Cured Fish

The visual highlight of the nigiri sequence arrived with the Akaebi. Naturally sweet raw red shrimp was draped with salmon roe (ikura) steeped in a decadent black truffle marinade. Finished with fresh, peppery mizuna greens and a delicate mist of edible gold dust, the bite paired sweet crunch with earthy truffle warmth.

What followed was a masterclass in balance: Saba Senmaizuke. Fatty autumn mackerel was lightly kissed by the blowtorch, pressed over seasoned sushi rice with fresh shiso and fermented tomato sauce, and enveloped in a paper-thin sheath of senmaizuke (Kyoto-style pickled turnip). The sweet vinegar crunch of the turnip neatly cut through the smokiness and rich oils of the torched fish.

Before reaching the grand finales, we were treated to Katsuo (skipjack tuna). Arriving under a glass cloche filled with aromatic woodsmoke, this was modori-katsuo—returning autumn tuna at its fattiest after summer feeding. Garnished with spicy, plump myoga ginger flower buds and a dab of sharp yellow mustard, each smoky morsel was robust and invigorating.

The Climax: Otoro, Ebodai, and Caviar Luxury

The final acts of the $118++ menu demonstrated why this tier stands apart.

First was the Otoro Charcoal Rice. Wild tuna belly was gently rested and warmed over a slab of pink Himalayan salt, allowing the marbling to soften without cooking. Laid over jet-black bamboo-charcoal sushi rice, the buttery fish literally dissolved on the tongue.

Next arrived the Yu-An Ebodai Handroll. As coastal waters cool, Pacific rudderfish gathers luscious winter fats. Lightly aburi-seared and basted in a traditional citrusy Yu-an yuzu-shoyu marinade, the fish was tucked into warm rice and handed to us wrapped in crackling, crisp nori.

The savory climax of the afternoon was Fat Cow’s celebrated Mini Chirashi Sushi, served inside a caviar tin. Beneath a glistening layer of briny caviar and fresh seasonal ikura lay succulent slices of sous-vide Kagoshima Akune Gold A5 Wagyu, folded together with chopped maguro and golden, creamy Hokkaido sea urchin (uni). Scooping through the layers revealed an interplay of textures: the warmth of sushi rice, the buttery melt of A5 beef fat, the oceanic richness of uni, and the salty pop of caviar. It was an extraordinary synthesis of Fat Cow’s dual masteries—wagyu and omakase craft.

To cleanse the palate and close out the experience, we enjoyed the chef’s Daily Selection of Ice Cream—a silky, mildly sweet homemade soy milk ice cream that ended the meal on a light, harmonious note.
