
Some of the best flavours come from home, and this September, J65’s Malaysian chefs are bringing theirs to the buffet.
From 11 September to 9 October 2026, Rasa Malaysia brings together regional favourites from across the country in a generous dinner buffet inspired by the dishes the chefs grew up with and are proud to share. J65’s Malaysian culinary team is joined by guest chefs from Shangri-La hotels in Malaysia, presenting flavours from Pahang, Melaka, Ipoh, Johor, Perak, Penang, Sabah and Sarawak.
Diners can discover hearty meat curries, comforting broths, wok-fried seafood, regional specialities and traditional sweets, alongside J65’s signature seafood-centric buffet, international dishes and familiar favourites. The feast extends into the alfresco area with additional live stations serving made-to-order Roti Canai, a generous Nasi Kandar spread and chilled Malaysian-inspired beverages.
Presented in collaboration with Tourism Malaysia, the Sarawak Trade and Tourism Office and the Sabah Trade and Tourism Office in Singapore, with the support of the High Commission of Malaysia in Singapore, Rasa Malaysia celebrates the breadth and diversity of Malaysian cuisine through the chefs who know these flavours best.

J65’s Malaysian Chefs Bring Hometown Flavours to the Buffet
At the heart of Rasa Malaysia are J65’s own Malaysian chefs, each drawing on the flavours and dishes closely associated with the places they call home.
Chef Leo – Pahang
Inspired by Pahang’s coastal flavours, Chef Leo presents two seafood favourites:
• Lala Pot – Fresh lala clams cooked in a fragrant, savoury sauce.
• Salted Egg Prawn – Crisp prawns tossed in a rich and creamy salted egg sauce.
Chef Ridzal – Melaka
Drawing on Melaka’s spice-rich culinary traditions, Chef Ridzal presents:
• Itik Lemak Chili Api – Duck cooked in a rich coconut gravy fragrant with turmeric and chilli.
• Assam Pedas Oxtail – Tender oxtail simmered in a bold, tangy and spicy Assam Pedas gravy.
Chef KC – Johor & Perak
Drawing from the flavours of Johor and Perak, Chef KC presents two comforting favourites:
• Fish Head Curry – Tender fish head cooked in a rich and aromatic curry gravy.
• Lamb Kut Teh – Tender lamb simmered in a
warming herbal broth with aromatic herbs and spices.
Chef King Ying – Ipoh
Chef King Ying pays tribute to a much-loved Malaysian favourite:
- Hainanese Chicken Rice – Tender chicken served with fragrant rice and traditional condiments.
Featured dishes: Fish Head Curry, Lamb Kut Teh
Together, the dishes offer diners a personal taste of the regions that have shaped J65’s Malaysian culinary team.
Guest Chefs Add the Flavours of Penang, Sabah and Sarawak
Extending the regional showcase, guest chefs from Shangri-La hotels in Malaysia bring distinctive favourites from Penang, Sabah and Sarawak to J65.
From Shangri-La Rasa Sayang, Penang, Chef Ka Meng Ooi and Chef Mohd Faizal Bin Mohd Hashim present two of Penang’s best-known culinary staples:
• Nasi Kandar – Aromatic curries and richly spiced gravies served with a generous selection of accompaniments.
• Mee Goreng Mamak – Wok-fried noodles layered with the bold, savoury and spicy flavours characteristic of Malaysian mamak cooking.
Featured dish: Nasi Kandar
From Shangri-La Tanjung Aru, Kota Kinabalu, Chef Melvin Gatu, Chef de Cuisine, adds the distinctive flavours of East Malaysia with:
• Lino Pot – A traditional Sabahan dish prepared with locally sourced ingredients and aromatic herbs.
• Sarawak Laksa – Rice vermicelli served in a richly aromatic broth with traditional accompaniments, balancing spicy and savoury flavours.
Together, J65’s chefs and their guest counterparts take diners on a culinary journey spanning Peninsular and East Malaysia, bringing a broad spectrum of regional flavours together at one table.

A Celebration of Malaysian Food and Culture
The opening weekend of Rasa Malaysia, from 11 to 13 September 2026, comes with added festivities, including Malaysian cultural dance performances and a curated showcase of arts and handicrafts.
Coinciding with Visit Malaysia 2026, the promotion gives diners in Singapore a broader taste of Malaysian cuisine – from familiar favourites to regional specialities rooted in their places of origin – while celebrating the country’s diverse culinary heritage. The Rasa Malaysia dinner buffet continues every evening except Thursdays through 9 October 2026.
