Grand Copthorne Waterfront Hotel Singapore’s latest culinary collaboration, The North Table, an exclusive four-hands dining collaboration at SanSara, from 9 to 13 September 2026.

Available for five days only, guests can embark on an culinary journey through North India, co-created by SanSara’s Master Chef Pannalal Nath and Guest Chef Mujeeb ur Rehman, who spent decades preserving the traditions of Awadhi cuisine, inspired by his great-grandfather, the late Abdul Raheem Quraishi, who served the Royal Kitchen of Awadh during the British era, and his grandfather, Mohammad Ahmed Quraishi, who carried on their family’s culinary legacy.

Together, Chef Pannalal and Chef Rehman have co-created menus paying tribute to North India’s culinary traditions, with each dish reflecting the unique flavours, ingredients and heritage of its region. Expect time-honoured recipes and techniques, from slow-cooking and charcoal grilling to handcrafted spice blends, carefully preserved and elevated by the chefs’ combined expertise.

Diners can choose between a 4-course and 6-course menu, available in both vegetarian and non-vegetarian options, alongside a curated à la carte selection.

Highlights include melt-in-your-mouth Shahi Galawati Kebab, Bharwan Calamari stuffed with prawn and crab mousse, and Kashmiri Morel Pulao with Saffron Butter Lobster Kurchan. Signatures such as Chowk Ke Tikki, Rajma Ki Galouti, and Kashmiri Morel Pulao with Saffron Paneer Rogan Josh are also available for vegetarian diners.

The à la carte menu also features signature creations from both chefs, including Bhune Tamater Jao Ka Shorba, Dum Ke Machli, served either seared or steamed according to preference, and Murgh Tikka Mirza Hasnu, showcasing a harmonious balance of spicy, tangy, and smoky flavours.
