The unmistakable sizzle of the wok returns to J65 as Ah Hoi’s Seafood Nights make a highly anticipated comeback, now part of J65’s dinner buffet experience every Thursday from 30 April 2026. This special showcase brings together the bold, nostalgic flavours of Singapore-style seafood zi char — offering a taste of dishes long loved, and a chance to experience Ah Hoi’s much-loved renditions of these familiar favourites.
First opened over 30 years ago at Traders Hotel Singapore (now JEN Singapore Tanglin by Shangri-La), Ah Hoi’s Kitchen was, for many, defined by its unmistakable flavours, accented with fiery wok hei — dishes that became part of gatherings with family and friends. Now, those well-loved favourites return, offering a rare opportunity to rediscover what made them so memorable.
Adding to the sense of familiarity is Chef Seng, formerly of Ah Hoi’s Kitchen, who returns with the same techniques, flavours, and unmistakable wok hei that defined its dishes.

2nd row, L to R: Mud Crab in Singapore Chili Crab Sauce with Fried Mantou, Sambal Petai Fried Rice with Prawns
3rd row: Black Pepper Kway Teow with Seafood, Mango Salad with Crispy Fish Skin
At the heart of the experience are Ah Hoi’s signature seafood classics, celebrated for their depth of flavour and unmistakable wok hei. The iconic Singapore Chilli Crab, served with golden fried mantou, remains a centrepiece — rich, indulgent, and deeply satisfying. Equally beloved is the intensely aromatic Black Pepper Kway Teow with Seafood, infused with that coveted smoky char, alongside the comforting Steamed Barramundi with Crispy Bean Crumb.

At the live show kitchen, premium Tiger Prawns with Vermicelli in Superior Broth or Crispy Noodles are freshly prepared to order.
These are the dishes guests remember — and the very ones they return for.
The menu extends into a vibrant showcase of Singapore-style zi char favourites, each delivering bold, familiar flavours. Highlights include Sambal Petai Fried Rice with Prawns, Sambal Sotong, Salted Egg Prawns, and Kung Poh Squid Ah Hoi’s Style, bringing together spice, depth, and that unmistakable depth of flavour.
Complementing these signatures are a variety of well-loved dishes and desserts that round out the experience. Guests can enjoy appetisers such as Nyonya Achar and Mango Salad with Crispy Fish Skin, alongside comforting soups ranging from Hot & Sour Soup to Fish Maw, and Lotus Root. On the sweeter side, a nostalgic Ice Kachang station sits alongside familiar treats including Chilled Mango Coulis with Pomelo.
Beyond the return of Ah Hoi’s classics, J65’s signature buffet spread is, of course, also part of the experience. Guests can further indulge in a generous selection of fresh chilled seafood on ice, including Boston lobsters, prawns and mussels, alongside Japanese sushi and maki, seasonal salads, and a variety of international favourites — offering even more to explore alongside these iconic dishes.
Set within a lively yet relaxed ambience, Ah Hoi’s Seafood Nights brings together the essence of communal dining with the comfort of a contemporary space — offering guests the best of both worlds.
