Mosella launched its distinctive À La Carte Style Brunch, taking place every Saturday. Central to the brunch experience is a commitment to originality and high-quality gastronomic experiences, influenced by the rich and varied Mediterranean-inspired cuisine Mosella is celebrated for. Each dish is meticulously prepared to order, promising a dining journey unmatched in quality and flavour.

Apart from the enticing à la carte menu, guests may also enjoy the three-course set lunch menu ($48++ per person) and three-course dinner menu ($88++ per person), whether dining solo or with companions. For lunch, expect a selection of colourful, satisfying Mediterranean dishes such as the Burrata & Heirloom Tomatoes, served with arugula, fennel compote and basil oil. Mains present options such as Barramundi, a seabass pan-seared to perfection, or the melt-in-the-mouth tender Beef Tenderloin, accompanied by truffle potato mousseline, heirloom baby carrots, thyme jus, as well as the Aglio E Olio Mushroom Spaghetti. Those with a sweet hankering will enjoy a taste of the signature Burnt Basque Cheesecake. At dinner, the options are further expanded with favourites such as Hokkaido Scallop Carpaccio and Beef Tenderloin Carpaccio for starters, followed by Beef Tenderloin and Cochinillo Asado for mains.

Highlights include the Amelie Fine de Claire Oysters N3 adorned with bloody Mary foam and wafu sauce, 48-month Aged Iberico Ham served atop Spanish crystal bread and tomatoes, as well as the beloved Hamachi Tiradito, a dish of Japanese yellowtail, lightly flavoured with mandarin ponzu, truffle and garlic chips.

Mosella’s open kitchen concept provides guests with an elevated brunch experience, with dedicated stations thoughtfully arrayed for limitless enjoyment. Start with a dazzling selection of vibrant salads and cold cuts like Truffle Mortadella and Beef Bresaola. A lineup of expertly crafted mains fired from the Josper grill include signatures like the Gamba Roja al “Ajillo”, a flavourful dish of Mediterranean red prawn with garlic, chili, and smoked paprika, the Cochinillo, a crisp-skinned Spanish suckling pig accompanied by roasted apple purée, and the New Zealand Lamb Chops. Not to be missed is the selection of toothsome fresh pasta prepared to order while from the carving station, the Salmon Wellington and Black Angus Beef Tenderloin promise a culinary treat for limitless enjoyment.

Complementing the main courses, guests are invited to indulge in an assortment of exquisite desserts, patisserie creations, fantastical chocolates, and artisan cheeses. This culinary experience is elevated by the soothing harmonies of live jazz music, setting the stage for a brunch like no other, amidst the expansive, nature-filled surroundings of the hotel—an “orchard in the city” experience.
