Justin Quek is one of Asia’s most celebrated chefs. With his modern approach to French cuisine that melds a mastery of technique with a delicacy of touch, he singlehandedly put Singapore on the global gastronomic map, and in the process inspired a new generation of chefs.
Chef Justin discovered his passion for the culinary world at a tender age, fast understanding that the only way to succeed in such a competitive field was through discipline and dedication. In a career that has spanned over three decades, he has risen through the ranks, starting as a trainee at the Mandarin Oriental in Singapore followed by The Oriental in Bangkok, and these experiences spurred him on to pursue his dream.
He withdrew his life savings to finance a year’s trip to Europe, where he worked in the kitchens of some of the most feted Michelin-starred restaurants in the world. Here he honed not only his skills but established his own personal culinary style, which marries the precision of French technique with contemporary finesse, and occasional deft hints at his Chinese heritage.

The first dish is a duo, with raw hamachi (amberjack) slices dressed with lemon vinaigrette on one side, and on the other, a cup of steamed egg custard topped with champagne emulsion and osetra caviar.

The beef was done till medium and proved to be tender. For someone who almost always orders the beef dish over fish, this one really won me over.

Chef Justin Quek’s Flavours of Asia Ready-made Sauces & Dips. Chef Justin introduces his series of new sauces and dips made from premium ingredients he sourced himself in Asia.
In May, Quek started JustIN Flavours of Asia (on ground level above Chinoserie), his all-day casual restaurant that is “like a canteen that serves Singapore comfort food”. The 72-seat restaurant, which faces MBS’ nightly light and water show, has an all-day menu that starts from $8.
Quek is also capitalising on the wide range of people that visit MBS, such as exhibition and convention participants, office workers, tourists and families who have a choice between JustIN and Chinoiserie.
