Firing up one of Christmas’s quintessential delicacies with the interplay of savoury and fruity flavours is the Whole Roast Turkey with Apple Cider Brine & Giblet Cornbread Loaf (4.55kg, $198nett). Relying on old-fashioned brining techniques, and made with apple cider, spices and herbs, this juicy, flavourful golden brown bird combines the best of both worlds in terms of taste sensations by combining both apple cider and citrus juices, as well as essential oils from the rinds. That’s not all, our brine is seasoned to perfection with the finest in fresh herbs and fragrant spices. Each turkey is immersed in apple cider brine for 12 hours to tighten the skin.

The Christmas bird is then roasted till golden-brown, resulting in lovely crispy skin that encases moist and fork-tender meat beneath. In the spotlight this year is the Peanut Butter Speculoos Praline Log Cake (1kg, $68nett) that features an oh-so-delightful interplay of textures and flavours.

Each slice boasts just the right proportions of peanut butter-infused frosting, moreish speculoos crumble, crunchy feuilletine and luscious chocolate sponge. The savoury-sweet speculoos, a caramelised shortcrust biscuit traditionally enjoyed at Christmas time in parts of Europe such as Belgium and the Netherlands, enhances the flavour of the decadent peanut butter. Each mouthful is an experience of pure bliss!
Another new East-meets-West delight that will please merrymakers is the Pandan & Mixed Berries Chiffon Log Cake (1kg, $68nett). This creation is a modern, elevated interpretation of the pandan chiffon cake – a local treat well-known amongst Singaporeans. Bite into layers of pillowy soft pandan sponge, interweaved with lightly whipped ganache and an ambrosial marmalade made with whole fresh berries. The reduction of assorted berries imparts an addictive, compelling aroma that lingers beautifully on the palate, and the tartness of the berry marmalade is the perfect counterpoint to the rich, fragrant pandan.

Another new log cake to look forward to is the Brandy White Chocolate Chestnut Log Cake (1kg, $68nett) that pays homage to the well-loved Mont Blanc. This rendition of the Yule log features vanilla sponge soaked in brandy and interlaced with whipped white chocolate ganache and a generous filling of premium chestnuts imported from France; the layers are enrobed by delicate vanilla buttercream; the earthy flavour of the chestnut paste pairs well with brandy.
