Start the culinary thrill with a refreshing Pomegranate Granite with Fresh Lime. A contemporary twist on heritage dishes are two bite-sized morsels that pack a robust punch. Cooked for over four hours, Beef Rendang with potatoes is an unassuming delectable treat stuffed in a kueh pie tee cup. Reminiscent of an ice cream cone is rich and spicy Sumatran Chicken Curry balanced out by the sweet acidity of an Asian pear sphere. With the cuisine influenced by Arab and Indian traders, enjoy Martabak Pastry and Prawn Malabar enriched with spices and coconut sauce cocooned in a semolina puff.
Other delights highlighting the country’s favourites and seasonal ingredients are Tomato Tart comprising goat cheese and jelly infused with Indonesia basil leaf; Vegetable Kroket with Sambal Mayonnaise; and hearty scone studded with pineapple chunks.
Round off on a sweet note as six desserts take the spotlight and presented on plates made by a local potter, Mud Rock Ceramics. Standouts are Sumatra Coffee Bean Pound Cake laced with orange and Co-Ka-Me 68.5% Chocolate Mousse. Its smoky and bittersweet profile is a result of three different beans and the work of Specialty Pastry Chef Desmond Lee, who represented Singapore in the finals of World Chocolate Master last year.
