Zafferano is perched 240m above ground. Guests come through an entryway flanked by 2 glass-clad kitchens: the cold preparation area to one side, the hot kitchen to the other. They step into an open hall with encircling glass curtain walls. The main dining room sits on a raised wooden platform that offers gorgeous and expansive views.
The décor style by designphasedba is sleek and elegant; lines are long, straight and right-angled, or circular. Glass, steel, polished stone and wood are the main surfaces and textures. A neutral, subdued palette of whites, black, beige and natural wood tones allows the crisp geometries to stand out, and the natural sunlight to play on the reflective surfaces.
A circular bar featuring a luminescent ‘crown’ of a thousand steel saffron tendrils is the dramatic centrepiece of the dining room. A convivial spot for an evening with friends, enjoying concoctions whipped up by skilled bartenders.
Also located amid the indoor buzz is the wine lounge, comfortably furnished with lounge chairs and ottomans, designed for unwinding with before or after-dinner drinks, tended to by in-house sommelier.
Zafferano offers two exclusive rooms – the Private Dining Room and the Wine Room. The Private Dining Room boasts a private entrance for discreet access, designed for a luxurious party for up to 14 guests. The Wine Room seats up to 12 guests around a long table, cocooned by racks of wine bottles, offering an elegant, embracing ambience.
With its soaring cathedral-like volumes, lush greenery and panoramic views, the Terrace Lounge is a sensational rendezvous for al fresco mingling with friends over drinks. Glass-walled and open to the sky, it features its own dedicated bar, stools and sofa seats, where you can sit and soak in the vibe and stunning views of the glittering Marina Bay skyline from this spectacular height, sipping on sunset cocktails, and snacking on light savoury bites.
Italian food lovers would enjoy the Chef’s Menu; a truly satisfying 5-course meal beautifully plated using only the freshest of ingredients of the season. Every bite is sure to linger in appreciation of the different textures and preparation thoughtfully put together by Chef Marco Guccio. Reservation is highly recommended for this divine menu curated especially if one is looking to impress over a meal.
We started off with a glass of Perrier-Jouet champagne.
The first course was Amuse Bouche made of foie gras mousse, fruit compote and paired with Château Rieussec Carmes de Rieussec Sauternes, France, 2013
Amuse-bouches are different from appetizers in that they are not ordered from a menu by patrons but are served gratis and according to the chef’s selection alone. These, often accompanied by a complementing wine, are served both to prepare the guest for the meal and to offer a glimpse into the chef’s approach to the art of cuisine.
Then the second course were Capellini – caviale – ostrica – erba cipollina,
cold angel hair with seasonal oysters some Kristal gold caviar and lemon chive emulsion. This lovely dish paired with G.H. Mumm Champagne, Cordon Rouge Brut, France, NV
This cold angel hair was so refreshing , especially mixed with fresh oysters (2 oysters in fact) and caviar. Pairing with Mumm Champagne was perfect.
Next is also a cold dish, Piselli – stracciatella – uova di trota , cold seasonal green pea soup, ‘stracciatella’, trout roe. This is creamy and you can still chew on the green pea . It gives good texture to the soup. What was interesting was that it was served cold. Pairing that with wine Ōhau Woven Stone, Sauvignon Blanc, New Zealand, 2016 enhanced the taste.
There was a choice of main, one was the Ippogrosso – funghi – carciofi
pan-seared Norwegian halibut, seasonal mushrooms ‘guazzetto’, artichokes
Paired with Yealands Estate Single Vineyard, Pinot Noir, New Zealand, 2015
The Norwegian halibut was pan-seared to perfection, crispy on the outer skin, soft inside. It went well with the articokes and seasonal mushrooms.
Another choice of the main was Manzo – patata viola – asparagi bianchi
Tajima wagyu beef marble 8 striploin purple potato, white asparagus, parsnip purée
Paired with Fattoria Nittardi, AD Astra, Italy, 2013
The wagyu beef was cooked just right, still tender and soft. Very juicy and absolutely delicious.
Dessert was Cioccolato – caffe’ – frutti di bosco
white chocolate and coffee ice cream, strawberry purée, raspberry sponge
Paired with Marchesi Antinori, Vin Santo del Chianti Classico, Italy, 2009
The dessert was an art piece, almost couldn’t bear to eat.
Provenance and seasonality are the most compelling features of Zafferano’s cuisine, in which the finest and freshest produce of the particular time of year are sourced from growers and artisans all over Italy. With these ingredients in hand, Head Chef Marco Guccio draws inspiration from his home country to craft a contemporary Italian cuisine of authenticity, infused with natural yet intense flavors.
