Thailand Flavourscape Buffet Returns to Grand Copthorne Waterfront Hotel Singapore

Following the success of last year’s Phuket Flavourscape Buffet,  Grand Copthorne Waterfront Hotel Singapore returns with Thailand Flavourscape Buffet, an expanded culinary showcase celebrating the richness and diversity of Thailand’s regional cuisine. Running from 13 July to 23 August 2026 at Food Capital, this year’s edition is presented with the support of the Royal Thai Embassy Singapore and brings together three accomplished chefs in an exclusive six-hands collaboration.

Headlining this year’s showcase is MasterChef UK finalist and owner-chef of REALM Bangkok, REALM Songkhla and REALM Thumnoonvithim, Chef Nawamin “Boss” Pinpathomrat, alongside Chef Witoon Kamonphun, Head Chef of M Social Hotel Phuket, and Executive Chef David Toh of Grand Copthorne Waterfront Hotel Singapore. Together, the trio presents an immersive culinary journey through Thailand’s regional kitchens, showcasing authentic flavours from the country’s north, central plains and southern coastline alongside contemporary interpretations of beloved Thai classics. 

Building on last year’s destination-focused showcase, Thailand Flavourscape Buffet expands the experience beyond Phuket to celebrate the breadth of Thailand’s culinary heritage. From aromatic curries and fragrant soups to vibrant street food favourites and traditional desserts, diners can look forward to an authentic exploration of one of Southeast Asia’s most celebrated cuisines.

This year, we wanted to create an even more immersive culinary journey by bringing together three chefs with distinct regional expertise and perspectives. A Six-Hands Collaboration Celebrating Thai Culinary Heritage and Diversity

Each chef brings a unique perspective to the collaboration. Chef Nawamin “Boss” Pinpathomrat, MasterChef UK finalist and owner-chef of REALM Bangkok, REALM Songkhla and REALM Thumnoonvithim, is renowned for combining traditional Thai recipes with refined contemporary techniques. His menu highlights draw inspiration from Southern Thailand and Bangkok, offering elegant interpretations of regional favourites

Joining him is Chef Witoon Kamonphun, Head Chef of M Social Hotel Phuket, whose extensive experience across Thailand’s leading luxury hospitality scene shines through dishes inspired by Phuket’s rich culinary traditions, featuring bold spices, fresh seafood and vibrant local ingredients.

Together with Grand Copthorne Waterfront Hotel Singapore’s award-winning Executive Chef Executive Chef David Toh and the culinary team at Grand Copthorne Waterfront Hotel Singapore, the chefs present a menu that reflects Thailand’s rich culinary diversity while remaining approachable and engaging for Singapore diners.

Through this collaboration, we wanted to showcase that diversity by presenting both familiar favourites and lesser-known regional specialities. Thailand Flavourscape Buffet Highlights

The buffet features an extensive selection of authentic Thai specialities, premium seafood and interactive live stations designed to showcase the depth and complexity of Thai cuisine.

Among the highlights are Grand Tom Yum Goong, a robust and aromatic prawn soup layered with lemongrass, galangal and kaffir lime; Andaman Seafood Curry with Betel Leaves, showcasing premium seafood and coastal herbs; Wagyu Massaman Curry, slow-braised and richly spiced; and Signature Yellow Curry Flower Crab, a luxurious interpretation of one of Thailand’s most beloved curry dishes.

Other standout creations include Tom Yum Fried Rice with Prawns, Steamed Seabass with Lime and Chilli, Southern Phuket-Style Braised Pork Belly, Pad Thai Goong, and Fried River Prawns with Garlic and Pepper.

Guests can also enjoy a selection of Thai street food favourites and live stations including Moo Ping Thai Pork Skewers, Thai Boat Noodles, and freshly prepared Thai salads and condiments.

To complete the experience, diners can indulge in an array of Thai-inspired desserts including Mango Sticky Rice, Thai Tea Mousse Cake, Pumpkin Custard, Thai Crispy Pancakes, and Thai Milk Tea Ice Cream.

Opening Night Cultural Showcase

Guests dining on the opening evening on 13 July will enjoy an exclusive cultural showcase featuring a spectacular Thai-style Whole Golden Pig, served with traditional accompaniments including Nam Jim Jaew, Thai chilli sauce and Thai seafood sauce.

The evening will also feature performances by Anurak Thai Arts & Culture, including classical Thai dance and the enchanting sounds of the traditional Thai string instrument, the Khim, bringing the sights and sounds of Thailand to Food Capital. Complementing the festivities will be a selection of Thai-inspired pop-up stalls and an exclusive lucky draw featuring attractive prizes, creating a vibrant celebration of Thai culture, cuisine and hospitality.

Extending the Thailand Flavourscape experience beyond the buffet, The Lobby Lounge presents a Thailand Flavourscape Afternoon Tea featuring a selection of savoury and sweet creations inspired by Thailand’s vibrant culinary traditions and complemented by an AI-powered wellness assessment and a bespoke herbal tea experience in collaboration with Luli.

Savoury highlights include Lemongrass Chicken with Sweet Chilli Dip, Thai Fish Cakes with Nam Jim Sauce, Tom Yum Goong Seafood Tartlet, and Mango and Papaya Salad with Roasted Peanuts.

Sweet creations include Thai Mango Macaron, Taro Coconut Mousse, Pandan Coconut Swiss Roll, alongside The Lobby Lounge’s signature scones served with accompaniments.
