“Perbacco” is an Italian word to accentuate positive comments. It can also be an expression of pleasure and surprise, as well as a reference to Bacchus, God of Wine and “good times.” A fitting name for a restaurant so thoroughly steeped in the traditions of Italy, yet with a refreshingly modern feel and attitude.
Located along Ann Siang Road shop house, the interior is beautifully decorated.
We tried some of their signature dish.
Carpaccio di Manzo e Burrata
Raw Angus Beef Carpaccio, Rosemary Extra Virgin Olive Oil and Burrata Cheese Salad
For the tasting menu served, the raw angus beef carpaccio was not available so you will not see it in the picture. However, the burrata cheese is delicious.
Burrata is a fresh Italian buffalo milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture.
Carpaccio di Pesce e Spuma di Limone
Seafood Carpaccio of Hokkaido Scallop, Sicilian Red Prawn, Caviar and Lemon Foam
The lemon foam blends well with the Seafood Carpaccio of Hokkaido Scallop, Sicilian Red Prawn, Caviar. Brings out the freshness.
Tagliolini al Tartufo e Riccio di Mare
Angel Hair with Black Truffle Sauce and Fresh Sea Urchin
This dish is highly recommended for its flavor, strong black truffle sauce with sea urchin. Great pairing.
Calamari alla Griglia, Spinaci e Marmellata di Cipolle Rosse
Squid with Red Onion Jam and Sautéed Spinach
Perfectly grilled squid with sauteed spinach goes well together. The red onion jam is a bit too sweet to go with the grilled squid, in my opinion.
Panna Cotta alle Nocciole Caramellate
Caramelized Hazelnut Panna Cotta
Now this is a dessert to come back for, recommended by us. You get Caramelized hazelnut to go with panna cotta, another good pairing.
