Dessert Parlour SUGARHAUS introduces FAT BELLY, a speakeasy-style Steakhouse

Dessert parlour Sugarhaus has expanded its shopfront, unveiling a larger 45-seater space where customers can enjoy homemade ice creams and desserts. Located within Serene Centre, the neighbourhood joint will also be home to a new sister brand, Fat Belly, a 10-
seater speakeasy-style steakhouse that offers alternative cuts of beef such as
Flat Iron.
Both brands are founded by Stanley Seow, a banker-turned-food entrepreneur
with a passion for all things savoury and sweet. His venture into the food and
beverage industry began with a takeaway ice cream concept located in Jalan
Selaseh, known as “Bing Qi Lin”. Upon its relocation to Serene Centre, Stanley
decided that a rebranding was needed to make the concept more relatable to
a wider demographic. Thus, Sugarhaus was born in October 2016.

Sugarhaus – Homemade Ice Creams and Desserts
Calling itself a place “where happiness is homemade”, the new Sugarhaus
showcases a selection of European-inspired homemade ice cream. Even the
flavours that are locally-inspired, such as Gula Melaka, have European
elements in them. At any one time, there will be 18 flavours of ice cream
available on rotation. Stanley is responsible for most of the flavours, constantly
experimenting with endless possibilities of flavour combinations. “Ice cream
making is very much like mathematics. You have to really understand the
different components of the flavour(s) that you are trying to go for,” he shares.

A single scoop goes for $3.50++, while those looking to indulge can opt for the
premium flavours. Priced at $4.30++ per scoop, the premium flavours stand out
for the fact that they are richer and creamier than most commercial ice creams.
The Dutch Chocolate, made with a concoction of different types of chocolates,
is one of the best-selling flavours that remain on the menu. Another signature
flavour is the Sea Salt Toffee, Sugarhaus’ rendition of the more common salted
caramel flavour. The toffee adds a richer and more buttery taste to the ice
cream. The reopening of Sugarhaus will also see introductions of new ice
cream flavours. Order the Sour Cherry, made with amarena cherries imported
from Italy; or the Hibiscus Yogurt for an exotic and aromatic treat.

Apart from ice cream, there is also an assortment of homemade desserts on
display at the counter, beginning with the signature Chocolate Cake ($8++).
Sugarhaus’ famous Taro Galaxy Cake has been recreated into the Galaxy Tart
($8++), made with a beautiful white chocolate mirror glaze and filled with
chocolate mousse, raspberry jelly and chocolate crumble. Next up is the
Lemon Popsicle Tart ($8++). As its name suggests, the mouth-watering tart
comes in the shape of a popsicle filled with lemon sable, lemon parfait and
coated with white chocolate. Other standouts include the Hazelnut Tart ($8++)
and Earl Grey Lavender ($7.50++).

Sugarhaus also offers a simple menu of savoury options available till 5pm, such
as the Salmon ($18++) – smoked maple soy glazed salmon, quinoa, roasted
vegetables and salad – and Beef & Foie Gras ($20++) – beef cubes, foie gras,
furikake, Japanese rice and onsen egg.

Fat Belly – Flat Iron Steaks and Alternative Cuts
Come nightfall, diners can look forward to a menu of alternative cuts of steak
at the newly opened Fat Belly. Sharing a space with Sugarhaus, the 10-seater
speakeasy-style steakhouse will sit customers along a bar counter where they
can interact with the chef and watch as their cuts of meat are being grilled. Here,
there is a strong focus on lesser known cuts, as these tend to boast stronger
and more robust flavours.

Short Rib

Short ribs are a cut of beef taken from the brisket, chuck, plate, or rib areas of beef cattle. They consist of a short portion of the rib bone, which is overlain by meat which varies in thickness. Very juicy and tender, perfect to have it on its own without sauce or maybe just a bit of sea salt by the side.

Flat iron is a cut of steak cut with the grain from the shoulder of the animal.  This lesser known cut is relatively tender and packs a punch of flavours. Very juicy and tender, perfect to have it on its own even without sauce.
Various cuts of beef, such as the Short Rib ($25++), will be available on
rotation, but the main highlight is The Flat Iron ($22++), a cut of beef from the
cow’s shoulder. This lesser known cut is relatively tender and packs a punch of
flavours. All steaks come with a side of house salad and chimichurri sauce. For
an additional $5++, guests can also enjoy side dishes such as Creamed Kale
and Guanciale Mac & Cheese.

There will also be one dessert exclusively available on Fat Belly’s menu: the Foie Gras ($13++) is served with foie gras
ice cream, brulee banana, speculoos and roasted nuts.

Don’t leave the place without trying their homemade ice cream, very creamy and rich.

On weekends and public holidays, little tots will be treated to a special bouncy
castle available at the spacious outdoor patio. The bouncy castle is only
available on Saturdays, Sundays and Public Holidays from 11am to 5pm.
“With Sugarhaus and Fat Belly, our aim is to offer new experiences for our
customers each time they walk in – either with interesting new flavours of ice
cream and desserts, or a lesser known cut of steak that they may not be familiar
with. That, and ensuring they leave with happy hearts and bellies,” says Stanley.
