Chef de Cuisine Giorgio Maggioni unveils a line-up of his newly minted creations, made with the finest seasonal ingredients.
Asparagus aficionados can look forward to savour the mellow flavour of the harvest of the season with the Asparagi. This spring delicacy is first blanched and then marinated with fresh orange to exude a refreshing, zesty flavour.
Another new antipasto on the menu will be the Fegato d’anatra e Piccione which reflects Chef Giorgio’s unique interplay of textures and temperatures with the seamless pairing of cold foie gras terrine and warm sous vide pigeon breast, served with oven baked pan brioche. The final touch of coffee powder on the terrine enhances the sweetness and the colour complexity of the entire dish.
An addition to the pasta selections is the Spaghetti Chittara, a pork-based pasta with homemade luganega ragout prepared with a mixture of red wine, herbs and yellow datterino tomato coulis, and simmered for six hours.
Tender and soft white fish meat takes centre stage for the choice of mains in Chef’s Giorgio new menu. Poached in special marinated olive oil infused with citrus jus and herbs, the Ricciola or the amberjack is accompanied with a sweet and piquant combination of candied onions and spicy arrabbiata broth. Or opt for the Sogliola, pan-seared Dover sole fillet stuffed with anchovies, macadamia and spinach, and topped off with creamy mussel sauce.
Round off the meal on a sweet note with Cannoli, a classic Italian dessert featuring a smooth and luscious blend of ricotta cream cheese and yuzu parfait encased in a thin and crispy shell, and further complemented with the fragrant and tangy notes of earl grey lemon infusion.
