Six-Expression Winter Edition Launches from February 25th – 29th

Restaurant JAG, Singapore’s only French Omakase establishment has announced an exclusive partnership with Parisian fragrance-house Maison 21G, for a one-of-a-kind olfactory dinner experience. From February 25th till the 29th[1], the very first Scent & Savour menu will be curated exclusively to transport diners back to a moment in time.
Marrying fragrance and fine dining, the experience will awaken memories, moods, emotions and nostalgia through a curated selection of scents and flavours inspired by the seasons and the distinct French landscape – from the pristine coastlines of Normandy, magnificent shoreline of Corsica, lush mountain forests and snow-capped alps in the North!
The MICHELIN-Starred Restaurant JAG, celebrated for introducing over 40 indigenous herbs foraged in the wilds of the Savoie mountains to its Singapore diners through its distinct seasonal vegetable led-omakase menu, has unveiled Winter – its changing landscapes, ingredients and wild fragrances of this cold season – as its inspiration for its first Scent & Savour menu.
Launching on 25th of February for limited seating, diners will be guided by scent through an exclusive range of six bespoke perfumes, artfully curated by Founder and CEO of Maison 21G, Ms. Johanna Monange. Johanna worked closely with JAG Executive Chef Jeremy Gillon to develop the perfect aroma that complemented the six distinct landscapes, his carefully selected winter herbs and ingredients, achieving the delicate harmony of scent and flavour, giving diners an emotional and visceral experience.
On his first-ever scent-inspired menu, Chef Jeremy said, “Growing up in Normandy, I was always influenced by the flavours and aromas of local ingredients and herbs unique to our landscape and climate. But as you travel through France, each unique location gives you equally remarkable and unmatched smells, ingredients and cuisine – from the oceans to the alps.”

There is incredible compatibility with how we both approach our art. Fragrance and taste are fundamental in dining, and I believe we have created a truly sensorial gourmet programme that will take our diners to new levels of appreciating food, evoking old memories and creating new ones.”
Maison 21 G’s founder, Johanna, added, “Our olfactory sense is deeply linked to our palate more than people realise. We smell everything we eat, unconsciously, and it is called retro-olfaction. In the restaurant, we choose what we want to eat according to our taste. Perfumery should be the same and people should be empowered to choose their favourite ingredients in the perfume they wear and that represent the essence of them. This is what I am aiming to do with Maison 21 G, bringing transparency, personalisation and curation in the perfumery world. I was delighted to smell, exchange and partner with Jeremy to pair my favourite natural ingredients with his artistic and aromatic cuisine. We need to help people to understand and appreciate haute couture perfumery ingredients by associating another sense on it! .

The Scent & Savour – Winter Edition Menu invites diners to clear their minds and delve into a crisp bouquet of aromas and flavours that will capture the invigorating purity of the coldest season of the year.

Nowhere in France is quite like Corsica – our last and highly inspirational influence in this menu. The contrasting landscape of oceans and mountains has created its own striking beauty in food, wine, language and culture.
