Dolce Vita in Mandarin Oriental, Singapore presents over 10 new Italian creations and all-time favourites by Chef de Cuisine Giorgio Maggioni. With mesmerising views and an award-winning wine list recognised by Wine Spectator for Best of Award of Excellence for five consecutive years, a memorable experience awaits gourmands and connoisseurs alike.

 

Using time-honoured methods, enjoy a selection of handcrafted pastas that are freshly made with the finest produce and ingredients flown in from different regions in Italy. Not to be missed is Spaghetti with succulent Sicilian red prawns lightly marinated with seasonal Amalfi organic lemon, tossed with Italian chilli for subtle heat, and garnished with gold leaf inspired by Capri, a region famed for its upscale shopping and luxury lifestyles. Another delight are dainty purses of Tortelli encasing a classic trio combination of broccoli, smoked scamorza and premium Cantabrian anchovies.

 

For mains, Brazino delivers clean flavours as the wild sea bass is poached to retain and highlight the natural sweetness of the fish. It is accompanied by parsnip puree, radicchio dressed with balsamic vinegar, caviar and beetroot coulis. Look forward to Agnello, where the Dorper lamb is sustainably sourced and slow-braised to tender perfection. This savoury stalwart goes well with a velvety artichoke puree, salsify confit and parsley.

 

To finish, try the new fruity and vibrant strawberry Fragole where sweet and distinctively tangy flavours refresh the palate. Other signatures such as Tiramisu and Fruitti Tropicali with coconut sorbet are also options.
