Evoking nostalgic memories of festive celebrations back home, Group Executive Chef Seumas Smith has crafted a special three-course lunch ($42++ per person) and dinner ($62++ per person) menu of time-honoured Christmas classics, interpreted with contemporary flair. The gastronomic delights are redolent of the generous spread cooked up on Christmas Day.
Perfect for a lunch gathering with colleagues or a dinner affair with loved ones from 1st to 30th December 2018 (except 23rd to 26th December), the menu highlights toothsome creations. Start with the “Prawn Cocktail”, a perennial party favourite. Chef Seumas’ rendition features a Carabinero prawn crudo with apple, dill, nasturtium leaves, and a delicate buttermilk “cocktail sauce” made with housemade tomato ketchup.
“Turkey” is a hearty and flavourful plate of roasted turkey breast, chestnuts, brussel sprouts with bacon fat, cranberry jam, turkey jus and an inspired traditional British bread sauce with star anise, nutmeg and cloves; but with the use of sweet celeriac purée instead of bread to thicken the sauce. A side of roasted potatoes with pickled mustard seeds, crème fraîche and chives accompanies this main.
In the spirit of ‘tis season, the “Eggnog” parfait completes the meal – an indulgent composition of bourbon-spiked mousse complemented by golden raisin milk ice cream and nutmeg milk foam.
