

‘What grows together, goes together‘ – from fruits to livestock, nuances of the terroir are expressed in its produce. As one of the most fertile regions in Italy, Emilia Romagna is no stranger to this adage.
On 24 August, explore the rich epicurean history of Emilia Romagna with an exclusive five-course dinner curated by Head Chef Emanuele Faggi, paired with wines from the region and Parma ham presented by Consorzio del Prosciutto di Parma. The convivial evening will be accompanied by ‘live’ slicing demonstrations of prosciutto di Parma.
Highlights of the evening include a hearty antipasto of deep-fried egg with sautéed mushrooms and Parma ham foam. It is enjoyed with a vibrant B.io Sangiovese di Romagna 2016, an organic wine which boasts a bouquet of violets, wild cherry and a slightly spicy note, enticing the palate with rich acidity and fine, silky tannins. Double-filled ravioli with Pio Tosini Parma ham and parmesan cheese, balsamic reduction is served with Medici Ermete Lambrusco Reggiano Secco “Concerto” 2017 ; accented with intense fruity nuances of fresh red berries, strawberries, raspberries, and cherries, the sparkling dry red wine offers a lively accompaniment to the flavourful primi.
