Formerly FOO’D By Davide Oldani, Sinfonia Ristorante has undergone a branding revamp. Still nestled within the elegant Victoria Concert Hall, Sinfonia Ristorante, which means “symphony” in Italian, doles out a repertoire of brand-new creations by Chef Simone Depalmas, who is of Sardinian descent and has over 21 years of experience under his belt.

Chef Simone’s culinary journey began when he was in Italy, and later he moved to Jakarta where he worked as the executive chef at Sopra Ristorante. He came to Singapore in 2013, and quickly became acquainted with the vibrant dining scene. He uses best-quality seasonal ingredients, and he harnesses their natural flavours through creative culinary techniques.

Truffle Chicken Liver Brûlée

Roasted Focaccia
The new menu will showcase Italian dishes from different regions of the country. The Truffle Chicken Liver Brûlée is an innovative way of savouring chicken liver pâté. It is a aromatic dish thanks to the leek puree with high antioxidant herbs such as red mizuna and marigold. This is a dish that requires utmost precision and experience, as achieving the different textures and balance in taste, from the pâté’s smoothness and firmness, richness of the chicken liver to the crisp sugar crust’s sweetness, is almost a high-wire act. Various types of wines, including Madeira wine, Port wine and Marsala wine — are used to balance the flavours of the liver. Spread the pâté on the roasted focaccia. The flavours crescendo with the black truffle of Umbria.
Next, savour the flavours of the sea with the Sea urchin, Alaskan king crab, rice roll, salmon roe, foam. This is a splendid rice roll comprising Hokkaido sea urchin; chilli crab made with Alaskan king crab; tomato crumble; and salmon roe, wrapped in seaweed and pulled together by a piquant sea urchin sauce and clam foam.

Handmade Squid Ink Tagliolini, King Prawn, Tarragon, Bottarga
Another popular dish of the restaurant is the Handmade Squid Ink Tagliolini, King Prawn, Tarragon, Bottarga. Tagliolini is a poplar pasta in a number of Italian regions such as Liguria, Emilia-Romagna, Molise and Piemonte. It is rounder and slimmer as compared to other tagliatelle pastas. Freshly made daily in the kitchen with real squid ink, these flavorful, slightly chewy strands of tagliolini are complemented with Mediterranean king prawn, tarragon and bottarga (cured fish roe).

There is also the Beef Short Ribs, which boasts a sweet and savoury interplay thanks to the chestnut, salmon roe and horseradish. The tender USDA Wagyu beef short ribs are perfectly marbled and slow-cooked for 12 hours, hence have a great flavour depth.

Three-style Roasted Cabbage
According to Chef, this is one of the most popular dishes here, Three-style Roasted Cabbage, seasoned with seasonal herbs and enlivened with sour cream.

The Mandarin
The Mandarin is an exquisite replica of the fruit. Topped with chocolate crumble, the inside is filled with mascarpone cheese and fresh orange juice. Pry into the middle and the juice will squirt out of the dessert. You can also opt for the refreshing Passion Fruit, Raspberry Meringue, Rose Lychee Sorbet.
The lunch sets start from $45++ per person for three courses on weekdays, while dinner degustation menus are priced at $138++ per person for five courses and $168++ for seven courses.
Dining Specials
- From Tuesday to Thursday, diners can enjoy 4-course Chef’s Special Menu for dinner at only $88++ per person.
- Every day from 5pm – 7pm, enjoy complimentary Grilled Smoked Duck Bun when you order a gin Martini ($18++) at DRINK cocktail bar.
- On Saturday and Sunday, diners can look forward to Omakase Lunch Special with 12 dishes free-flow at only $52++ per person. Supplement $40++ for free-flow Bottega Brut.
