MARTELL CONTINUES ITS GASTRONOMIC JOURNEY WITH FLAVOURS OF MARTELL
Celebrating the Lunar New Year Through Chinese Culinary Heritage with Three of Singapore’s Esteemed Chinese Dining Destinations

This Lunar New Year, Martell returns with the second edition of Flavours of Martell, inviting diners to experience how cognac can elevate the depth, symbolism and craftsmanship of Chinese festive cuisine.

Running from 4 February to 3 March 2026, the limited-time gastronomy series brings together Peach Blossoms, Summer Palace, and Royal China, each presenting a Lunar New Year menu that goes beyond traditional pairings. Instead, Martell’s cognacs are thoughtfully woven into the dishes themselves, adding warmth, complexity and nuance to flavours familiar to regular diners.

Across all three restaurants, Martell plays an integral role in shaping the menus, whether through infusion, subtle enhancement or expressive integration, offering a Lunar New Year dining experience distinct from each restaurant’s usual festive offerings.

At Peach Blossoms, the Martell Lunar New Year menu is curated as a celebration of prosperity and indulgence with cognac playing a central role in the cuisine itself. The seven-course menu is designed to elevate familiar Cantonese flavours, spotlighting dishes that integrate cognac into Chinese cuisine naturally through pairings and infusion with its expressions.

Highlights of the seven-course meal include amaebi with Martell Cordon Bleu jelly and a refined double-boiled hydrangea coral trout soup infused with Martell XXO, where the cognac adds warmth and aromatic depth to the classic broth. The experience concludes with Martell XXO cognac ice cream, offering a contemporary festive finish that is distinct from Peach Blossoms’ usual offerings.

At the Michelin-starred Summer Palace, Martell’s presence is expressed with reverence and refinement, thoughtfully enhancing the restaurant’s time-honoured Cantonese traditions. The Lunar New Year set menu reflects how cognac can deepen classic flavours through subtle integration, bringing added richness and roundness to these dishes.

Guests begin with an auspicious geoduck and crispy Kurobuta pork prosperity toss, before moving into a warming centrepiece of hot stone-braised bird’s nest and fish maw soup with superior chicken and conpoy, tently accented with Martell XXO. Highlights continue with braised 18-head South African abalone in supreme oyster sauce and steamed lobster with an organic garlic trio, where Martell’s presence amplifies natural sweetness and umami. The experience concludes with traditional desserts symbolising prosperity and renewal, a Lunar New Year menu rooted in heritage, quietly elevated through Martell’s craftsmanship.

Royal China welcomes its first Chinese New Year by marking the celebrations with a Martell-inspired menu that is defined by harmony and subtlety. Martell brings a contemporary elegance to familiar Cantonese favourites, adding structure, balance and warmth to festive dishes. The menu begins with yuan yang mantou paired with Martell Cordon Bleu–infused olive vegetable butter, before progressing to highlights such as wagyu beef and foie gras accented with Martell VSOP, where the cognac enhances richness while refining the dish’s savoury depth.

Cognac is thoughtfully woven throughout the menu — from seafood courses to noodle dishes — offering a Lunar New Year experience that feels celebratory yet distinctly refreshed. The result is a festive menu that goes beyond tradition, presenting Royal China’s classics through a refined Martell lens.

Flavours of Martell invites diners to experience this Lunar New Year through a lens of elegance, tradition and innovation.
