Edge’s ‘Tastes of the Australian Outback’ highlights premium Australian produce, featuring delicacies from both land and sea, alongside Edge’s signature international spread.
Indulge in prized oceanic delicacies featuring freshly shucked Tasmanian Oysters, Poached
Whole Rainbow Trout, and Teochew-style Steamed Giant Australian Queensland Grouper.
Savour a feast of premium meats and exclusive cuts, from the Signature Carving Station,
highlighting succulent 65°C Sous Vide Slow-roasted Australian Black Angus Beef, Slow roasted Kangaroo Leg marinated in Taylor Port Wine and Australian Duck Bourguignon with Nashi Pear. The Charcoal Barbecue Grill will also offer aromatic Grilled Olive-marinated Spatchcock with Roasted Parsnips, and Pacific Mussels in Chardonnay Sauce. As an Ambassador of Indoguna Singapore, Executive Chef Dayan Hartill-Law of Palette Restaurant in Gold Coast, Australia, will make a guest appearance at Edge on 14 October 2025, where he will join Executive Chef Andy Oh and his Culinary Team to officially launch the ‘Tastes of the Australian Outback’ buffet spread.
With two decades of fine-dining experience and a philosophy built on respect for ingredients, Chef Dayan will share his insights and cooking techniques for the exclusive Australian meat cuts featured in the buffet spread.
