This June, VUE elevates its gastronomic prowess even further with a brand-new Seasonal Summer Menu, a masterclass in the refined flavours of 2GR Wagyu – Australia’s premium Full-Blood Wagyu.
As a connoisseur of fine dining, the promise of such an exclusive ingredient, sourced through Euraco Fine Food in Singapore, immediately piqued my interest. 2GR Wagyu, hailed as one of the world’s most prestigious Full-Blood Wagyu brands, is celebrated not just for its exceptional marbling score of 8/9 – indicating an unparalleled richness, tenderness, and flavour – but also for its commitment to ethical farming and a meticulously controlled, vertically integrated supply chain. Every succulent cut, from Bone-in Striploin to the more esoteric Tongue and Cheek, truly tells a story of heritage and quality.
A Journey Through Wagyu Excellence
The Summer menu at VUE is a meticulously crafted narrative, guiding diners through a multi-course exploration of 2GR Wagyu’s versatility. Our culinary journey began with the Wagyu Beef Tartare. This was a truly modern and unfussy interpretation, where finely hand-cut Australian Full-Blood Wagyu took centre stage. It was tossed with a judicious blend of house-made chilli oil, oyster sauce, yuzu juice, and spicy goma. The result was a surprisingly clean and balanced dish, allowing the beef’s natural richness to shine, beautifully complemented by subtle layers of heat, umami, and citrus – a sophisticated overture to the courses that followed.
Next, a refined take on comfort emerged: Grilled Wagyu Beef Tongue with Mushroom Risotto. VUE’s signature creamy mushroom risotto, with its earthy depth, provided a perfect foil for the tender, smoky slices of perfectly grilled Wagyu beef tongue. This dish masterfully balanced robust flavours with an elegant progression.
The crescendo of slow-cooked indulgence arrived with the Braised Wagyu Beef Cheek. Braised for two hours in VUE’s signature red wine jus – a deep, concentrated reduction crafted from 30 litres of Shiraz, simmered painstakingly over eight hours down to just five – this dish was a revelation. The beef cheek was meltingly tender, imbued with an intense flavour that spoke volumes of dedication and technique.
For the grand finale of the savoury courses, the 2GR Flight of 3 Beefs presented a modern grill masterpiece. Featuring Wagyu striploin, oyster blade, and cheek, each cut was expertly grilled over traditional binchōtan charcoal. This trio offered a diverse tasting experience, showcasing the distinct textures and rich, natural flavours of the Wagyu in a truly elevated style. The smoky aroma from the binchōtan imparted an irresistible character, a perfect testament to the quality of the beef.
The Ambiance and Libations
Beyond the plate, VUE’s allure is undeniable. The interior of the restaurant exudes contemporary sophistication, with its chic design and floor-to-ceiling windows ensuring that the panoramic vista of Marina Bay is always a breathtaking backdrop. As day transitioned to dusk, the shimmering city lights enhanced the romantic and luxurious atmosphere, making every moment feel special.
To complement the exceptional cuisine, VUE’s alfresco bar offers a curated selection of wines, spirits, and bespoke cocktails.
