The buffet, launching on 15 February 2025, will feature the vibrant flavours of Phuket, combined with cultural performances and a carefully crafted menu that highlights the best of Thai cuisine.

The Phuket Flavourscape Buffet is the result of an exciting collaboration between Chef David Toh, Executive Chef of Grand Copthorne Waterfront Hotel Singapore, and Head Chef Witoon Kamonphun of Beast & Butterflies from the recently-opened M Social Hotel Phuket. Chef David, with over 35 years of experience, is known for his meticulous attention to detail and passion for delivering top-notch dishes, while Chef Witoon brings a fresh, creative twist to authentic Thai flavours. Together, they have created a magical experience that’s both vibrant and indulgent, showcasing iconic dishes through a sophisticated lens. Blending Chef David’s precision and Chef Witoon’s love for bold, local flavours, the duo has crafted a menu that is sure to excite the senses and leave guests wanting more.

Get ready to be transported to the streets of Phuket as the all-day dining venue, Food Capital transforms into a Thai haven, featuring live cooking stations on rotation and a delectable spread of authentic dishes that pay homage to Thailand’s rich culinary heritage. Diners can expect dishes prepared fresh and to perfection, all while basking in the lively energy of the convivial space. Adding an adventurous twist, diners can choose from two intriguing high-protein options: the Silkworm Thai Basil Pork Pizza and the Crispy Cricket Onion Quiche, offering a unique taste of Thailand’s bustling night markets. Look forward to a curated Thai-inspired drink by the hotel’s residential Thai mixologist, Taenny Mookeai, alongside beverage partners such as Chang Beer and Tarsier Spirit, offering a range of refreshing drinks to complement the dining experience.

Enhancing the cultural experience, the well-known Anurak Thai Arts & Culture group will perform captivating Thai cultural showcases, from traditional dances to mesmerising music, immersing guests in the essence of Thailand exclusively on 15 February across three timeslots: 545PM, 7PM and 8PM. The exclusive dining experience is priced at $72++ for adults and $36++ for children aged 6-11, offering a delectable spread of authentic Thai dishes that promise a feast for the senses. Guests can also join for lunch, available from Monday to Saturday, at the same prices, or indulge in an extravagant dinner experience, priced at $102++ for adults and $51++ for children from Sunday to Thursday, and $112++ for adults and $56++ for children on Friday and Saturday.

Whet your appetite with starters like Yum Neau Yang, a zesty grilled beef salad that combines citrusy tang with a spicy kick. It’s made with tender beef sirloin, crisp cucumber, Thai celery, and juicy cherry tomatoes.

The buffet showcases a carousel of Thailand’s most beloved dishes, each brimming with bold flavours. No Thai meal is complete without Tom Yum Goong, the iconic spicy prawn soup that masterfully balances sour and savoury notes, infused with fragrant herbs and tender, succulent prawns. Not-to-be-missed is also the everpopular Phad Thai Goong, another crowd-favourite, featuring stir-fried rice noodles coated in a sweet and tangy tamarind sauce, topped with juicy prawns and finished with crushed peanuts. The Khao Soi Gai, Northern Thailand’s signature curry noodle dish, rounds out the mains with its creamy broth, crispy noodles, and chicken cooked to perfection.

Round off the grand affair with a sweet finale where the dessert selection promises to delight. Delight in Tab Tim Krob, a refreshing dessert of crunchy water chestnuts coated in tapioca flour and served in sweet coconut milk, or go back to classics with Kao Niew Ma Moung, sticky rice paired with ripe, juicy mango and topped with coconut milk and roasted mung beans.
