Revolutionary Mashing Process: InchDairnie employs a Meura mash filter, one of only two in use in Scotland, ensuring an efficient and precise extraction of cereals.
Distinctive Fermentation: A rye-specific yeast is employed, a choice that leads to lower yields but significantly richer flavour profiles.
Artisanal Distillation: RyeLaw undergoes double distillation in pot stills – a departure from the more common continuous distillation process. The first distillation utilises rare double condensers, followed by a bespoke Lomond Hill still, co-designed by Ian Palmer and the esteemed stillmaker, Frilli.
