Innovative Crafting Process

The creation of RyeLaw is a testament to InchDairnie’s unwavering commitment to quality. Each step of its production process reflects meticulous attention to detail and a willingness to embrace innovative techniques:

Precise Grain Selection: RyeLaw is composed of a carefully balanced blend of 53% malted rye and 47% malted barley, ground to an extra fine consistency to extract maximum flavour.

Revolutionary Mashing Process: InchDairnie employs a Meura mash filter, one of only two in use in Scotland, ensuring an efficient and precise extraction of cereals.

Distinctive Fermentation: A rye-specific yeast is employed, a choice that leads to lower yields but significantly richer flavour profiles.

Artisanal Distillation: RyeLaw undergoes double distillation in pot stills – a departure from the more common continuous distillation process. The first distillation utilises rare double condensers, followed by a bespoke Lomond Hill still, co-designed by Ian Palmer and the esteemed stillmaker, Frilli.

Exceptional Maturation: The whisky is aged in charred new oak casks sourced from the Ozark Mountains, USA, adding a distinctive layer of complexity to its character.
