Spanish Chef Fernando Arellano of two Michelin-starred Zaranda take over the kitchen of ESQUINA only for two nights. The only Mallorcan restaurant to hold two Michelin stars, Zaranda’s Chef Fernando will be showcasing hearty modern Spanish-Mediterranean cuisine inspired by his heritage and personal culinary memories.
The uniquely curated seven-course menu includes the Marinated Black Angus Beef Dumpling, which is lightly smoked, served with onion custard and black truffle, as well as the Lamb “Mandala”, accompanied by Arabic sweet spices and aubergine. Also experience Chef’s own take on “All I Pebre“, a Spanish dish traditionally cooked with eel, which Chef Fernando will be preparing with octopus, garlic and paprika. The gastronomic journey comes to an end on a sweet note with Seasons of Almond.

A native of Madrid, Chef Fernando is the only chef to win and retain two Michelin stars in Mallorca, part of the Spanish Balearic Islands – an achievement attained after over twenty years of dedication, hard work, and passion for his art. Prior to the opening of Zaranda in 2005, Chef Fernando honed his culinary skills working in some of Europe’s best restaurants including Le Gavroche (London), Patrick Guilbaud (Dublin) and Don Alfonso 1890, (Naples). Honouring his roots, Chef Fernando brings to the table modern Spanish Mallorcan cuisine.

Taking after its namesake (translated from Spanish as “the corner”), Esquina is tucked away at the corner of Jiak Chuan Road. Exuding an underground charm, Esquina is designed by Singapore-based Columbian architect Antonio Eraso and boasts a design concept of an old yet modern charm that is strongly reflected through Esquina’s interior.
