On the 40th floor, nestled between the clouds and a 15,000-square-feet Sky Forest, Artemis is a new Singapore landmark showcasing the Mediterranean’s rich culinary heritage with the freshest organic produce.
Elevated above the hustle and bustle of the city on the rooftop of CapitaGreen, the restaurant and bar offer spectacular views of the urban skyline to the sea beyond.
With dining for 120 and private room seating of up to 40, as well as a breezy outdoor terrace ideal for savouring a broad portfolio of wine, cocktails and craft beers, Artemis embodies grand Mediterranean hospitality where the sky is the limit.
The restaurant gloriously perched on the 40th floor of CapitaGreen – a sustainable tower with a green exterior wall. Floor-to-ceiling glass windows stretch all around the building, which faces the glittering Marina Bay.
I recommend diners to start off with a glass of Duval Leroy Champagne, chilled to perfection. Pair your champagne with fresh oysters.
After oysters we try the SMOKED EEL with White Asparagus, Forest Mushrooms, Garlic lower, Salty Fingers. We paired it with delicious light refreshing PROIDL white wine
One signature dish I would recommend is the CHAR-GRILLED SPANISH OCTOPUS with
Confit Cherry Tomato, Preserved Lemon, Pickled Padron Peppers
See the char-grilled ends of the octopus. Its crispy at the end, while soft in the body. Pair it with SANCERRE wine.
This is one of Chef Fernando Arevalo’s favourite dishes. It was not difficult to see why – this dish was nicely grilled to perfection on the outside, yet leaving the interior soft and tasty.
Pair that with SANCERRE
After that we have the LÉGINE AUSTRALE with Grilled Japanese Leeks, White Chervil Root Purée, Yuzu & Pork Broth . Pair it with wine from FARM TABLE.
The LÉGINE AUSTRALE is also known as Patagonian toothfish ( Dissostichus eleginoides ) It is a species of fish from cold seas in southern area with high commercial value, prized for its white and tender flesh. It is a carnivorous species, which can reach a rather good size (more than 2 m and over 80 kg ) and live beyond 35 years. Its lifestyle is essentially demersal : toothfish generally live near the bottom, from shallow depths to over 2,000 m . As you can see its white and taste really good.
Pair it with FARM TABLE
Chef Fernando Arevalo continued to surprise us with the next dish – Slow Cooked Iberico Pork with Cognac Apple Compote, Buttered Turnip, Dolcemente, Almonds. The iberico pork was wonderfully done – juicy with a nice texture both on the inside and outside. The apple compote complemented the taste of this dish.
Pair it with SELA
Its dessert time and we chose the ICE CREAM DEGUSTATION which is available during dinner only. It has three types of ice cream.
1. SEAWEED & WHITE CHOCOLATE ICE CREAM
Strawberries, Salted Sesame Crumble
2. ROSE VINEGAR ICE CREAM
Almond Crumble, Raspberries & Raspberry Granita
3. CHOCOLATE SAFFRON ICE CREAM
Saffron Tuile, Bitter Orange Jam
Pair it with TARIQUET
There is one more recommendation, the dessert PANCHINETA with
Vanilla Crème Pâtissière, Peach, Shiso Leaf & Apricot Ice Cream,
Cognac Flambé
The term flamb [flahm-BAY] is a French word meaning “flaming” or “flamed.” Flambe means to ignite foods that have liquor or liqueur added. This is done for a dramatic effect and to develop a rich flavor of the liqueur to the foods without adding the alcohol.
Prepare to take some pictures of the flame as Cognac is pour onto the dessert.
We feel ARTEMIS GRILL really live up to its mission: to serve Mediterranean’s rich culinary heritage with the freshest organic produce.
